From the vine to bottle, at Cellar Pinol we are focused on the art of creating a fine wine. Today, that means a marriage of tradition and technology. When you enter our cellar you’ll find the latest technical and oenological equipment, surrounded by medieval stone walls. Sitting in a temperature and moisture controlled room, French oak casks and bottles wait to be filled with juice and then are aged to perfection. The great majority of our wines age in one of our two ageing cellars, one of them built around ancient underground wine presses quarried out of the original rock.



Each day in the cellar is devoted to a specific varietal where winemakers carefully follow each barrels progression. From the exhaustive control of the maturation process to following the microclimates of the vineyards, our methods yield complex, high expression wines with great personality, bouquet and taste
